Autumn Apple & Cinnamon Oatmeal Muffins

One of our favorite fall family activities is Apple Picking! 

When you’re back from the orchard turn your harvest into this healthy snack with our recipe for Autumn Apple & Cinnamon Oatmeal Muffins 🍎

Ingredients:

2 cups rolled oats

1 1/2 cups milk (or almond milk)

1 large apple, peeled, cored, and grated

2 eggs

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup raisins or dried cranberries (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions:

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease.

In a large mixing bowl, combine the rolled oats and milk. Let it sit for about 10 minutes to allow the oats to soak up some of the milk.

Add the grated apple, eggs, honey or maple syrup, and vanilla extract to the oat mixture. Mix well.

In a separate bowl, whisk together the baking powder, cinnamon, and salt. Add this dry mixture to the wet ingredients and stir until just combined.

Fold in the raisins or dried cranberries and nuts if using.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

These muffins are not only delicious but also packed with fiber from the oats and natural sweetness from the apples and honey. They’re perfect for breakfast, a school snack, or a healthy dessert. Enjoy the flavors of autumn with every bite! 🍂
